Gratitude List 28/9/22
Here is the recipe for The Apple cake that I have made many times: it's very quick and easy: Thank You, Thank You, Thank You.
3/4 oil (I use a good quality olive oil)
3/4 Brown sugar
2 eggs
1 cup Self Raising Flour
4 apples
1/2 lb Apricot jam
Cinnamon (optional)
Beat the first four ingredients together, with cinnamon, if liked. Place this batter mixture into a well-greased and lined 10” round cake tin and thinly slice apples on top of the mixture. Bake for 20 mins at mark 4, 350 F or 170C. Add melted apricot jam on top and continue baking for 30mins.
For a richer cake use x 3 eggs, and put 1/4 cup of ground almonds on the batter before adding the apples. Bake for 30 mins and then add the melted jam, then bake for a further 30 mins.

2. At the moment the news is full of scarcity and constriction. I am counter-energising through baking and distributing as many cakes as I can manage. A small thing but it eases my heart and makes me feel better. Thank You, Thank You, Thank You.

6. I took the no.29 bus along Charing Cross Road, with my shopping bag. For transportation: Thank You, Thank You, Thank You.
7. I sat in St Giles Church Yard with Flo today. Nobody else was there. For solitude. Thank You: Thank You. Thank You.
8. I am glad to have re-engaged with this gratitude practice. It lifts my spirits: Thank You, Thank You, Thank You.
9. This is the first moment that I have had to write the list. For a full day: Thank You, Thank You, Thank You.
10. For the sweetness of a day interwoven with beauty. Thank You, Thank You, Thank You.
